Strawberry Shortcake Amplified

I think the real secret of Strawberry Shortcake is the cake itself. I have seen it served as strawberries over angel food cake or pound cake, but I like the classic Bisquick recipe made as drop biscuits with rough edges and crumbly texture. I love how the dryness of the biscuit perfectly absorbs the juice from the fruit. Here is the basic recipe with some of my add-in suggestions.


2 1/3 c Original Bisquick mix

½ c milk

3 Tbsp sugar

3 Tbsp butter, melted

Preheat oven to 425°F

Stir Bisquick, sugar, milk, and butter to make a soft dough

Add in suggestions: choose one

Zest of one lemon, 1 tsp extract such as almond, 1 Tbsp French lavender

Drop by 6 spoonfuls onto an ungreased cookie sheet

Top with raw sugar for added crunch

Bake for 10-12 min till browned

Serve split open with fruit and whipped cream


4 c sliced fresh strawberries or other fruit

think outside the box – peaches, blueberries, kiwi and passion fruit

½ c sugar

Add in suggestions: choose one

Chopped herbs such as lavender, ginger, or basil – to taste

Assorted Wines and Liqueurs – St Germain with peaches, Chambord or Framboise for berries, Port Wine in Strawberries, Amaretto, Grand Marnier, and Calvados are also great with several fruits

Really, the possibilities are endless. With summer bringing an abundance of farmers markets and fresh produce, play around with some combinations and discover your own favorites. This classic favorite amped up will make you an instant superstar so package some as gifts or shine at your next picnic or barbeque.
